Quick and Healthy Veggie Breakfast Sandwich for Busy Mornings

In the midst of your morning rush and post-workout fatigue, the last thing you need is a complicated breakfast. Fear not, because we have a delightful solution for you: a simple yet nutritious veggie sandwich that pairs perfectly with your morning coffee.


  • 4 slices of bread

  • Butter

  • Oil

  • Cumin seeds

  • Garlic

  • Tomato

  • Salt

  • Chilli powder

  • Sliced veggies (carrots, sweet corn, onions, beans, green capsicum)

  • Cheese

  • Green chutney (optional)


  1. Begin by toasting four slices of bread to prepare for two sandwiches. Alternatively, you can use butter and a pan for toasting.

  2. Heat a pan and add one tablespoon of oil. Let it warm up, then add cumin seeds and sauté them until they start to splutter.

  3. Add garlic and tomatoes to the pan. Cover the pan with a lid and allow the tomato to soften for about two minutes.

  4. Stir in one tablespoon of salt and chili powder, mixing well.

  5. Introduce the sliced veggies to the pan and stir-fry them until they are cooked to your liking.

  6. Place the cooked veggies on the toasted bread and sprinkle cheese over the top.

  7. Complete the sandwich by adding the second slice of toasted bread on top. For an extra burst of flavor, consider spreading green chutney on the toast before assembling the sandwich.
