After a hectic week at work, with zoom meetings scheduled even for your morning, are you looking for an easy fix for your breakfast? Why not make lemon rice with the rice leftover from your dinner?
This easy to make recipe will hardly take you any time to cook but will fill you up enough to have a great night’s sleep. Lemon rice is one of the easiest dishes to make, especially when you have leftover rice. Here is how:
Cooked rice, peanuts, oil, mustard, urad dal, chana dal, curry leaves, ginger, green chillies, red chilli powder, hing, salt, turmeric, water, lemon.
Put one spoon of oil in a pan, heat it up and add peanuts. Roast them till they are brown in colour and then put them aside. Now in the same pan add another spoon of oil and add mustard, urad and chana dal. Saute them till it gives golden colour and then add curry leaves, ginger, green chillies and a bit of red chilli. Fry them till you get the great smell of ginger and curry leaves and then add salt, turmeric and hing to the mix.
Now add three tablespoons of water, and mix it well. Once the water has evaporated, it will leave you with a wet mixture. Add cooked rice into this and mix it well. Squeeze lemon juice into this and then garnish it with roasted peanuts. Your breakfast is ready to be served.
